Tucked into a humid corner of Central America, Belize rises from Caribbean coral, cayes, and atolls in the east, to coastal wetlands and savannas, and finally to upland pine forests and river valleys in the west. In these settings, travelers dive, sail, fish, paddle, hike, bike, ride, and explore. Most opt for some kind of “surf and turf” vacation, spending half their days on the coast splashing around and the rest of their time in the highlands, visiting caves, ruins, and waterfalls. In fact, many resorts cater to this formula, teaming up with sister properties to provide creative tour packages.

Planning a trip to Belize is easy: avoid the hurricane months of September and October and know that April and May can be particularly dry, hot, and dusty. You’ll want to make reservations during high season (late December), but the rest of the year you can usually book places pretty late, or even just show up.

5…Climb a castle

The Xunantunich archeological site, built atop a limestone ridge above the Mopan River in western Belize, is not as easy to reach as Altun Ha, which is much closer to Belize City and the coastal resorts. You have to drive two hours west to the village of San Jose de Succotz, near the Guatemalan border, then put your car on a hand-cranked ferry. But the view from the main structure, El Castillo, is worth the trip. On the way up, note the unusual stucco frieze (a reproduction), then enjoy the sea of green forests in all directions once you are at the top, 135 feet above the plaza below. Xunantunich is believed to have been built sometime around 400 B.C. and deserted around A.D. 1000; at its peak, some 7,000–10,000 Maya lived in this city. That means the forests you see from the top of El Castillo probably did not exist back then because of the population pressures.

The ferry operates 8 AM to 3 PM daily, and is free, but feel free to tip the operator. Don’t miss the 4 PM return ferry with the park rangers, or you’ll be swimming. Entrance to the Xunantunich is US$2.50 per person; guides are available for US$20 per group.

4…Escape to your island

Belize has over 200 cayes (pronounced “keys”), or islands, in its quiet, beautiful corner of the Caribbean. Many cayes are uninhabited clumps of sand and mangroves, but a handful are livable. The most popular of these are Ambergris Caye and Caye Caulker, where an enormous range of accommodations and restaurants service the thousands of tourists who come to visit.

Or, you can also choose a much more exclusive island experience, like that had on South Water Caye, a privately owned island 14 miles offshore from Dangriga and 35 miles southeast of Belize City, at the center of Belize’s largest marine protected area. The island is less than a mile in length from north to south and only a quarter of a mile at its widest point. The main barrier reef crests just a stone’s throw from shore, atop a 1,000-foot coral wall. That means South Water has one of the few beaches in Belize where you can snorkel amazing coral formations right from the beach in front of your cabin.

There are three places to stay on South Water, all of which have sister resorts on the mainland. The nicest hotel is Pelican Beach Resort (tel. 011/501/522-2044, US$258–292, price includes three meals). Power is from the sun, and composting toilets help protect the fragile island ecology.

3…Go caving with a crystal maiden

Belize has one of the most extensive and fantastic cave systems in the world, especially the Cayo region which is riddled with underground passages and archaeological sites. Nearly every hotel in the country offers caving trips, usually floating on inner tubes through underground passages of the Caves Branch River, often with massive groups of tourists. These are fun trips, but more independent types reserve a day for the Cave of the Crystal Maiden, or Actun Tunichil Muknal (ATM). Mayans began using this site in early classic period (A.D. 300-600), and, according to Belize’s chief archaeologist Jaime Awe, they ventured deeper and deeper as the drought above ground grew worse, making more desperate human sacrifices as they went.

Amazingly, tourists are allowed into the cave where they will see 1,000-year-old skeletons and pottery shards left behind by the Maya. It is not a journey for the faint of heart though, involving a 2-mile hike and multiple river fordings just to get to the entrance. Then begins the swimming (yes, swimming), crawling, and climbing to get to the cave’s deepest secrets and grand caverns. Be sure to wear clothes and shoes that you don’t mind getting wet and muddy, plus something to change into after you emerge from the cave.

The typical day trip to the cave costs $80 per person and lasts from about 8 am to 5 pm. Several tour companies offer such trips to ATM, including Pacz Tours, based in the town of San Ignacio (Burns Ave, tel. 011/501/824-2477), which also has a two-day overnight trip to the cave and Roaring River valley for $250 per person.

2…Travel the Chocolate Trail

This trip begins in Punta Gorda, also known as “PG,” a small seaside town in Belize’s extreme southeast corner. It’s a quick flight from Belize City (or a 4-hour drive) to get there. The cacao tree (Theobroma cacao, or “food of the Gods”) has gained renewed importance in the culture and economy of Mayans in southern Belize and travelers are invited to check it out. The tree’s fruit yields a slimy-sweet pulp covering seeds that are later dried, fermented, and ground into chocolate.

Your first stop is in PG proper: go to Cotton Tree Chocolate (#2 Front Street, near Texaco, 011/501-621-8776) for a free tour of the small factory and a sample of unique products including rum-filled chocolates, hot chocolate mixes, chocolate soap, and other treats. (You may also want to grab a slice of “Punta Pizza” upstairs.)

Adventurous travelers can arrange a getaway to one of the Maya villages across the region, where you can stay in a simple guesthouse and learn about cacao growing, chocolate making, and life in a modern Maya village. Contact the offices of the Toledo Eco-tourism Association (Tel: 011/501-722-2096) or go straight to the village of San Felipe, to the house and chocolate workshop of Cyrila Cho (San Felipe, tel. 501/663-9632). Her five-hour chocolate tours begin with a visit to an organic cacao farm and continue with lunch in Cyrila’s home, where she and her daughter then lead a chocolate-making session.

1…Waterfall picnic in the Mountain Pine Ridge

The steep landscape of Belize’s highlands means lots of falling water. In fact, Thousand Foot Falls (actually 1,600 feet high) is the tallest waterfall in Central America, but you can only see it from afar. Luckily, the area is riddled with more accessible and exclusive cataracts, especially on the property of Hidden Valley Inn (tel. 011/501/822-3320, US$205 for a double, plus meals and taxes). Hidden Valley Inn is an upscale nature lodge on 7,200 acres of private property. Hike, bike, or ride a horse on their 90 miles of trails to one of the many private natural nooks on the property; seek out Secret Pools and Falls, an unforgettable spot draped in orchids and palmetto palms. Honeymoon packages include a gourmet picnic and chilled bottle of wine at the rustic table near the water’s edge.

Other waterfalls in this area are phenomenal, especially Five Sisters Falls and the pools at Río On. If you’re looking for an overnight splurge or simply a place to stop during your exploration of the Mountain Pine Ridge, visit Francis Ford

Coppola’s Blancaneaux Lodge (tel. 011/501/824-4912, from $250), whose cabanas and villas overlook the rocks and falls of Privassion Creek. You’re welcome to stop here to admire the scenery and wood-fired pizza restaurant, serving organic vegetables from the on-site garden and imported wine from Coppola’s California vineyards.

Meson Panza Verde Antigua

We arrived Meson Panza Verde mid day and Gabi kindly showed us the property.  It’s truly something special and not to be missed if you are headed to Antigua for a romantic occasion.   They offer an intimate and romantic boutique style accommodations and each room is beautifully decorated.  Check out each room on their website for details.   We returned later that evening for dinner which was absolutely amazing!  Eating at the Panza Verde Restaurant for dinner is a must!

Follow a winding stone staircase laced in ivy in the front courtyard and you’ll find a charming terrace with hammocks and an art gallery featuring rotating exhibits from the best local artists. Panza Verde also offers a yoga studio where classes are offered daily.  As we continued up an iron staircase to another terrace we overlooked the rooftops with gorgeous green plants and bright colorful flowers.  Next we walked over a mini bridge where you can sit on one of several stone benches, carved with detailed decoration, overlooking the magical views.

The Meson Panza Verde Restaurant is stunning!  The restaurant features brick, stone, wood , art, and is covered in beautiful plants and flowers in the corridor, on the walls, ledges, and multiple courtyards. Provoking art is scattered everywhere. At night the entire restaurant is softly glowing with candlelight.

We ate in the courtyard garden area surrounded with greenery and candles.  Our waiter Carlos provided wonderful friendly service.

The restaurant offers a large menu and scrumptious dishes.   It was hard to make up my mind so Carlos suggested I try one of their delicious steaks.  I enjoyed one of the most amazing steaks dinners of my life slathered in mushrooms and escargot!  Truly amazing.

Macadamia Parfait simply divine! I’ve never had anything like it!

Did you know that Guatemala is neighbor to Belize?  We’ve had a number of couples marry in Belize and continue on to Guatemala for their honeymoon!   I’ve visited many beautiful places in Guatemala and was looking forward to finally checking out Antigua after hearing so many rave reviews!

Shannon and I were fortunate to take a beautiful trip to Antigua, Guatemala last weekend.

Casa Encantada, just a few blocks south of Antigua’s Central Plaza, offers charming luxury boutique style accommodation with exceptional service.  The hotel is surrounded by breathtaking volcano views.  Upon entering Casa Encanda at 11:00 we walked through traditional iron and timber Guatemalan door where we were welcomed by Carlos.  The entrance is a beautiful and romantic courtyard lit with candles from the entrance to the front front desk.  The courtyard which offers a sitting area outside is also glowing with candles.   Arriving by day you will enter from the cobblestone streets through the same door and walk through the green garden courtyard accented with Guatemalan white calla lilles .  It was easy to relax with the beautiful setting and friendly hospitable staff who speak both English and Spanish.  The cozy sitting area with sofas and a fireplace is perfect for enjoying a cup of coffee .   The roof top terrace bar is a romantic spot to enjoy a cappuccino or glass of wine watching the sun set or rise.

Casa Encantada is perfect for couples preferring a small, quiet, cozy and intimate setting.  Each of the ten rooms is gorgeously decorated with traditional Guatemalan art work, local fabrics, hand carved wood furnishings and wrought-iron beds.  Upon check signature bathrobes with handmade Guatemalan Chocolate were placed on the bed.  We stayed in the roof top suite our second night.  What a special treat!   Even the ceiling featured incredible wood working details.  The views and privacy were something everyone will appreciate.  There is also a room downstairs with stepping stones over a lily pond leading to the room door.  At night it’s lite up beautifully with candles around the stones.  Check out Casa Encantada online, guests are raving about them and so are we!!

What beautiful bridesmaid robes!  What a unique, fun, and useful bridesmaid gift for your girls!  It’s something everyone will have fun wearing while getting ready for the big day.  It’s definitely something that they will continue to use!

Now check out the beautiful mixed colored bridesmaid dresses!  The soft mix of colors is gorgeous!  We’ve also seen bright mixed colored bridesmaid dresses right here in Belize.  Both options fit perfect for a beach wedding.

You know what else stands out to me?  The bridesmaids are all carrying white bouquets while the bride has a lovely bouquet that matches the bridesmaids beautifully.  This stands out just the right amount against her white wedding gown.

We just love this blog article by “Hostess with the Mostess!” on Preppy Beach Party created by Stephanie of Couture Parties

Whether you’re 7 or 70 there’s so many fun ideas for a birthday on the beach or a beach themed birthday party at home!  You could even consider some of these fun ideas for your destination wedding. Think casual welcome party or beach BBQ rehearsal dinner. My favorites include the ocean blue jello topped with gummy sea creatures, fun frosted sailboat, crab, seahorse, whale and cute swim trunk cookies, crab paper plates, and gummy skewers!!

Our bride Nicole is doing the cookies in April!  She’ll have rum punch and a variety of frosted beach cookies at the villa they are renting the night before the wedding.

“My son’s (Carter) birthday was around the corner, and of course I am in full season of weddings and parties, but we have had this tradition since he was 2 of asking what kind of party he wants… Sometimes i cringe at the answer, but this time I could have picked him up and swung him around and kissed him!

He wanted a beach party. We are fortunate enough to live by the beach and be members of a beach club, so this party was a no brainer for me!

The “Preppy Beach Party” inspiration came from what Carter loves to do in the summer…..living in his bathing suit, swimming, golfing, tennis, bbq’s, and playing baseball on the beach.  We had the party at the beach near us, which also has a pool.

I set up a themed dessert table with a preppy beach vibe to it:

The table featured wooden sailboats (big one from Homegoods, small ones from willowbaus), seersucker fabric as the tablecloth, and an overhead bunting made by gluing fabric triangles onto rope. I also made little “swim trunks banner” from fabric pieces and mini clothespins.

On the table were clear cups of blue jello with leftover rainbow gummy fish from the party favors, pretzel rods dipped in orange chocolate, and sugar cookies & cake from It’s My Party.

There was also a giant lollipop display on both sides of the table:

I also wanted to create a craft, so I had station where I made sailor-style hats out of newspaper and had stickers and markers available for the kids to decorate and take home!

Green Wedding Tips by I DO Belize Weddings

It’s no surprise that Eco-friendly Belize attracts more than those interested in an environmentally friendly vacation.  With the growing trend of “Green Weddings” Belize is one of the world’s top green destination wedding locations.  Why Go Green? Small eco-friendly choices can decrease your wedding’s impact on the environment without sacrificing style or elegance.  Even with one or two green options you’ll be making a difference for the earth and increasing the joy of your day.

Welcome Baskets. For those of you thinking about gift baskets for your guests upon arrival consider beach bags!  One item that gets thrown out after the goodies are gone is the gift basket.  Do you really expect your guests to lug an empty basket back to the States with them?  Unfortunately off to the landfill they usually go.  Beach bags or gift bags are versatile, and can be easily packed into a suitcase.  Fill the bags with goodies like Belizean jams, jellies, spices, hot sauces, and rum cake.

Wedding Yoga. We hope you’re planning an “I DO Belize Wedding” and that our prompt detailed responses, suggestions, and bridal calls are keeping you from feeling stressed.  We want you to have fun planning your big day but let’s face it…combine wedding planning, bridal magazines, websites, dress shopping, invitations, and getting advice from friends and family all of the details before your wedding day can naturally feel totally overwhelming.   The physical yoga poses, breathing exercises, and meditations are the perfect way to self-navigate into excellent physical and emotional health, and a state of inner calm and relaxation.  Try just ten poses two to three times a week to notice a difference.  If you’re new to yoga pick up a yoga for beginners book or try a gentle yoga class.

Invitations and paper. It’s very exciting that so many print companies are finally starting to use post- consumer products to create beautiful invitations, programs, and personal stationary! Weddings can generate a huge amount of paper consumption, so give careful thought to items that can be reduced. Use recycled paper wherever possible for wedding invitations; most companies can offer this option. Flowers. Use local native flowers!  Many traditional wedding flowers have to be imported to island destinations.  Transportation and care of these flowers requires extra resources.  If you’re lucky enough to marry here in Belize our native flowers are some of the most beautiful tropical flowers in the world!  Plus, you’ll be saving a lot of money using local verses imported flowers.

Jewelry.   North America contributes $16 billion a year into the jewelry market that could be infused into the green economy through the purchase of socially and environmentally responsible jewelry. Eco-conscious jewelers use recycled stones and metals, as well as ethically sourced diamonds, gems and metals to create breathtaking and unique items. Family heirlooms, vintage pieces, or handmade items are also sustainable, and often less expensive options to consider.

Transportation. Eliminate the vehicles.  Choose a reception venue that’s walkable from the ceremony.  In Belize there are plenty of breathtaking beach locations where you can hold both your ceremony and reception.

Favors. Yes!  Favors can be earth friendly too.   Often people come up with very cute favors which unfortunately guests don’t end up using. Chelsea Clinton gave reusable tote bags that they can use in place of paper or plastic for grocery shopping.  Imagine how cute would tropical personalized grocery totes be!

Eco-friendly flip flops make great wedding favors that guests can take home and wear again.  Look for flip flops made from natural materials like rubber, jute, or hemp.  Roxy makes a line of these flip flops starting at $9/pair.

Socially conscious donations in place of favors seem especially appropriate for the green bride. Pick a worthy association (something important to you), and notify the guests on pretty cards of handmade paper.  Consider places such as Nature Conservancy, Green Peace, Rainforest Network, Earth First, Farm Sanctuary, or even a Belize wildlife or reef preservation such as Green Reef or Belize Ecotourism Association.  Plantable seed content makes a cute and budget friendly addition! (which leads us to our next eco-favor.

Plantable eco-friendly place cards favors are a hit!  Beach theme seed place cards serve a decorative, a wedding favor and place card all in one!  These “Please be seeded” place cards perfect for a beach wedding and only run around $2.00 each!   Arranged seating not your style?  Reusable tins with plantable seeds and a saying is sure way to make a statement.  “Happiness held is the seed; happiness shared is the flower” -Anon.
